Many persimmons are astringent right up until they're completely ripe, but not Izu. For those who don't like their fruit quite so soft, this persimmon can be eaten when it's firm a nd crisp. This even if you pick the fruit a little early, you can display them like apples in a decorative bowl and they'll continue to ripen into that delicious, sweet flavor with a hint of autumn spices. You also won't have to wait so long on this one, as it's the earliest ripening of the non–astringent persimmon cultivars. We also like leaving fruit on the tree as ornaments, as it hangs on into winter with brilliant orange color.
