Jackson Cannon Bar Knife by R. Murphy Knives Developed by Jackson Cannon, Bar Director of the chic Hawthorne cocktail lounge in Boston, this eponymous knife is the finest bar knife we have found. Made of high-carbon stainless steel, the knife is surprisingly hefty, with a cocobolo handle and a full tang blade with triple brass rivets. The tip is far more squared than tapered, allowing for ease of rind work, while the blade itself is flush at the top to sweep clean the cutting board.
