Making Japanese pickles (tsukemono or oshinko) is incredibly easy using this beautifully designed glass jar with a stone weight. A bamboo lid and hinoki disk complete the product. Winner of the coveted Good Design Award in Japan. Not only can you make easy pickles out of cucumber, cabbage or radish, you can also add in vegetable skins, peels and roots to reduce food waste while adding fiber to your diet. Add salt for a quick and easy tsukemono that is done in 15 minutes, or leave overnight (1% of the weight of the vegetable in salt is usually good). The stone weight is an Aji stone and is sourced from Kagawa prefecture.
