Pascal Jolivet is one of the Loire Valley’s leading winemakers. Having founded his winery in 1985, Jolivet today tends 16 hectares of vines mostly in the prestigious appellations o f Sancerre and Pouilly Fume. This area is home to France’s most esteemed Sauvignon Blanc wines.A proponent of natural techniques, Pascal ferments his wine using natural yeasts.
