If you pluck enough tomato’s from the vine you’ll be given the gift of ‘tomato tar’ - the accumulation of acylsugars on the skin, leaving a stubborn greenish residue behind to be scrubbed or inhaled for hours. Pluck! was created a decade ago, the direct result of trying to capture a vivid culinary memory. Without question, one of the most standout dishes I have experienced was a rustic tomato salad in Campania. I didn’t know it at the time but Campania is the best region to grow tomatoes in Italy and that dish proved it to me. I still try to recreate this dish on a weekly basis.
