Harvest when the skin is so hard it cannot be pierced with your fingernail and the stem attaching it to the vine has begun to dry out. Cut the squash from the vine leaving about 3 inches of stem intact, as this helps it store much longer—if the stem breaks off completely, it’s best to use that squash right away.
