Whiskey JYPSI’s Tribute Double Barreled Bourbon begins with a commitment to quality rarely seen. Unlike mass-produced bourbons, we start with varietal-stated grains, many nearly extinct, grown on small family farms. These include the revived Cherokee White Corn, championed by our whiskey master, Ari Sussman. After a minimum four years in new charred American Oak, the bourbon undergoes a second barreling for 3–6 months in new American Oak at a lower proof. This costly process, crucial since 60% of bourbon’s flavor comes from the barrel, imparts extra vanilla and caramel notes, creating a depth unmatched by everyday bourbons. Bottled at 86-proof, Tribute achieves the ideal balance of rich flavor and smooth drinkability.
