One of each unblended Kansui Powder type. This set is used by chefs who prefer to customize their kansui mixture depending on the type of noodle being made. Kansui is used to make fresh ramen noodles. Kansui Powder is mixed into water and then added to flour to make the noodle dough. Without kansui, it's not ramen. Four variations of Kansui Powder are available from Ramen Supply Company. Type 1 is 100% Sodium Carbonate. Type 4 is 100% Potassium Carbonate.
