This chocolate is crafted from a microlot of cacao beans grown in Kisinga, on the southern slopes of Uganda’s majestic Rwenzori Mountains, known as the ‘Mountains of the Moon.’ The beans undergo a fermentation process of 5 to 6 days in eucalyptus wood boxes, followed by sun-drying on raised racks for 6 to 7 days. What sets this chocolate apart is its vivid and vibrant fruitiness, which bursts forth with cherry-like intensity, almost reaching a delightful tartness. Complementing this fruitiness are delicate, morning-fresh lilac floral aromas and a hint of funky, raw honey-like sweetness.
