This cacao is sourced from Kablon Farms, a single estate located in the town of Tupi, near the southernmost tip of the Philippines. The name Tupi originates from “Tufi,” a vine chewed by the native Blaan tribes who lived in the ancient forests of this region. This area of South Cotabato enjoys a mild, consistent climate without pronounced dry or wet seasons, making it ideal for agriculture. The resulting cacao offers a balanced, well-rounded profile with intense yet approachable flavours. Notes of mocha blend seamlessly with roasted chestnut, toasted coconut, dark caramel, and earthy undertones. The absence of lingering bitterness or astringent tannins gives it a smooth, truffle-like quality. It's an exceptionally harmonious, enjoyable chocolate.
