The farm is located on stumpy hills between the Yangtze River and Yellow Mountains. After the leaves are plucked in early May, they undergo a long withering (oxidation) process of four to five hours - twice as long as most black teas. The leaves are then rolled and placed in large bamboo baskets where they are stored in a steam filled room, which helps give this tea its characteristic chocolate flavor.
