The kefir grains are removed before the whey is separated by gravity straining, achieving a dense, yogurt-like consistency while retaining kefir's characteristic liveliness and natural effervescence. Thick, spoonable, and lightly effervescent, with a layered acidity that develops naturally through slow fermentation.
