Kembong is a member of the mackerel family. The flesh of Kembong is sweet and delicious. Fry it till crisp and crunchy with a little oil and making diagonal cuts along the slides o f the fish to fill its guts with freshly chopped red chillis that have been mixed with a sprinkle of sea salt. Add a squeeze of lime on it and it makes a perfect accompaniment to any meal, especially porridge. The default processing method for this fish will be Gilled, Gutted and Scaled.
