Our Foeder Beer is our interpretation of a Belgian-style pale ale, fermented in oak with a mixed culture. A blend of Belgian Pale Ale yeast, Saison yeast, and our house culture cre ates a layered fermentation character — floral, spicy, and dry with gentle acidity. This batch is hopped with Citra and Sabro, lending bright lemon-rind bitterness and an earthy, hay-like depth that complements the yeast’s fruity and peppery profile. Fermented in one of our foeders, the beer develops added structure and subtle oak complexity.
