We'll learn about the fermentation process and work through a recipe I learned from kimchi makers in my grandmother's hometown of Andong, South Korea. There are more than 200+ kimchi recipes that exist on the Korean peninsula, depending on region, ingredients, down to the way it is prepared in each household.
