This single malt from Kinglake Distillery represents both innovation and an artisanal approach, rooted in the natural environment. Founded in 2018, and known as Australia’s first carbon-neutral distillery, this off-grid distillery is crafted to make the most of its bushland setting. Using both local and imported barley, they take a unique approach by drawing untreated water from a mountain stream on-site. Instead of focusing on single casks, the distillery vats barrels, primarily small-format ex-bourbon casks re-coopered in Australia, to deliver a consistently balanced and pure spirit. Nose:Dried apricots, floral notes of jasmine and frangipani, a hint of vanilla pod, and leather, balanced with a subtle smokiness that becomes more prominent over time. Palate:Oily and warm, with fresh pastry, custard, and vanilla notes. Mid-palate reveals hints of leather, caramel, and sultanas, providing a pleasant musty richness. Finish:Bright citrus emerges in the finish as candied peel, accompanied by gentle, musty peat and distinct American oak tones, including vanilla and subtle spice.
