Darin will guide you throug h sharpening, maintenance, using whetstones, honing your blades, deburring, apexing, and more. You can bring your own knife to class or practice with ours and take your new skills home. A sharp knife is a safe knife! Class will be held offsite, in downtown Tacoma - with a maximum of 8 students per session. About Darin: 25 years as a professional chef and culinary instructor. For Darin, sharpening was never just a chore, it was an obsession. After spending decades relying on his tools in high-pressure kitchens, he needed to understand exactly why a knife performs the way it does.
