Koi Knives started with two mates, a shed, and a serious love of a good cheese board. Ramon and Shannon founded Koi Knives in Adelaide in 2015, bonding over design, craft, and — ju st as much — really good food. Shannon, the son of a blacksmith, spent 20 years mastering steel before turning that skill into knives built for the table as much as the workshop. That's why we're at Cheesefest: our blades are made for slicing, serving, and sharing — from precision paring knives to boning and fillet blades that handle everything from a wheel of brie to a whole trout.
