How do I make kombucha with a SCOBY? One needs to have a SCOBY in order to ferment your kombucha. You simply dissolve sugar into tea, cool it to room temperature, and add your SCOBY. Wait a few days and you will now have kombucha that you can flavour according to your desired taste. When receiving your SCOBY, you either need to ferment it within a few days of receiving it, or place it in the fridge for up to 10 days if you are not going to ferment it right away.
