The stories we tell ourselves are the foundation we stand upon as we aspire for new ways of life. Matcha does not fit neatly into the paradigm of twenty-first century convenience a nd by its sudden success, endangers its own sustainability. Finding new terroir, new ways of crafting, and new ways of balancing its staggering demand will be essential to its future. It requires us, too: removing preconceptions and challenging our bias.
