Krautchi is a kraut inspired by Korean kimchi, hence the name! It has the delicious Asian flavor profile from the trifecta of ginger, onion and garlic. Korean red pepper is added f or depth, but it is not excessively spicy. A true kimchi is usually made with fish sauce, but all of TTTT’s products are vegan, so we skip that part. And we use red cabbage instead of Nappa cabbage, because we like the color and texture after fermentation. Carrots add a nice crunch.
