Founded 200 years ago, Aumont brewery (formerly known as Ichishima Shuzo) produces sake with soft water taken from Kaji river which flows from the Iide mountain range. Aumont brewery uses only local Niigata rice (Gohayaku Mangoku and Koshitanrei) , the sakes created are high in aromatic, soft and subtle notes. The brewery is in the northern part of the Echigo plain. The clean, fresh air and low temperature with moderate snowfall in winter, are the most suitable conditions for sake production Tropical nose of fresh cut pineapple, melon, and ripe banana. A mild note of freshly steamed rice Mild, silky and smooth texture. High acidity with a savory finish.
