The raw material comes from artisanal fishing boats, whose fishing gear are purse seines and hoisted in the case of anchovies. The highest quality of anchovy is always captured in the Cantabrian Sea (FAO 27 VIIIc) during the spring. The Cantabrian anchovies (Engraulis encrasicolus) are fished during the spring months in the waters of the Bay of Biscay. It is at this time of year when the organoleptic properties of anchovy are best. Anchovies arrive fresh at our facilities, where they are prepared in barrels for maturing in salting (a process that takes approximately 12 to 18 months). After this time, they are carefully cleaned, making fillets that are packed in oil.
