Ingredients: Extra virgin olive oil, shallots, celery, carrots, garlic, leeks, thyme, bay leaf, plain flour, red wine, beef stock, diced lamb, sea salt, freshly ground black pepper , potatoes, butter. How it's made: I sear the diced lamb until browned, then remove from pan and add the root vegetables which I cook until soft. Then I add a good amount of red wine and reduce before adding the stock, tomato puree lamb and seasoning. Then it goes in the oven until soft and unctuous. Finally I add the sliced potatoes with a brush of melted butter. To prepare: Remove lid and heat in a pre heated oven @ 180 degrees C for 25 - 30 minutes. Show more
