It is leaner than chump or shoulder, with a tender texture and rich flavour, and it cooks quickly on the grill, in a pan or in the oven. How long to cook lamb leg steaks in the oven Preheat the oven to 180°C fan (200°C conventional). Sear the seasoned steaks in an ovenproof pan for 2 to 3 minutes per side, then oven-cook for 12 to 15 minutes for medium-rare. Rest under foil for 5 minutes before serving. How to cook lamb leg steaks on the grill Bring the steaks to room temperature for 30 minutes, rub with olive oil, salt, pepper and rosemary, then grill over high heat for 5 to 6 minutes, turning once, until charred outside and pink in the middle.
