Lambic-Style Blend No. 1 is inspired by the centuries-old Belgian tradition of lambic and reflects the terroir of Los Olivos—the place we call home. This two barrel-blend of sponta neously fermented wheat ale was brewed on a winter day in January 2022, with unmalted wheat and two-row barley grown on the FP Farm. The wort cooled overnight in our barn’s koelship, exposed to open air and temperatures below 42℉, allowing native yeast and bacteria from the surrounding white wine vineyard to initiate fermentation. The beer was then transferred to French oak wine barrels, where it aged for 26 months before being blended and bottled in August 2025. Since then, it has been cellaring for natural carbonation and continued flavor development, and is now ready to be enjoyed. The result is a unique, expressive beer shaped by the ingredients, microflora, and ecology of Los Olivos—one that could only be made here.
