It is creamy and slightly chalky in the middle and gets runnier as it ages. Not an overly strong cheese, but it does have character and a slight aroma. Not as 'stinky' as an Epoisses but does have some similar tones. A little dent in the top of the cheese is the perfect vehicle for a splash of Champagne if you want to kick things up.
