After completing the blends for our Overture we leave the remaining clear cider in barrels for a further 4 months to gain increased depth and beautiful sweetness. We then blend, bo ttle in 500ml, carbonate and sweeten (very lightly) to create a creamy, rich and textured Cider. Tasting note: Complex and fruity array of flavours with a touch of tannin, texture and acidity. The oak profile creates creates a nice grip to the finish.
