L'Aristocratte would be a Macvin if the rules allowed it. Macvin du Jura is grape must arrested with marc, the spirit distilled from pressed skins, and the appellation is strict ab out that. The Rattes use both marc and fine du Jura, the fine being distilled from wine rather than pomace, and that second spirit puts them outside the rules. So it goes out as a vin de liqueur, which describes it just as well and costs it nothing. Sweet without turning cloying, with dried fig, walnut and orange peel, and the spirit carrying a low warmth underneath.
