Dating to the 1840s, Late Flat Dutch is a classic heirloom storage cabbage known for its exceptionally large, dense heads, which can reach up to 25 pounds under favorable conditions. Its firm texture and excellent keeping quality have helped make it a favorite late-season variety for generations. Its exact origins are somewhat uncertain, but Late Flat Dutch is believed to have been developed from Brunswick, an old German drumhead cabbage. We have grown the two varieties side by side and found Late Flat Dutch to produce larger, denser heads with better resistance to splitting and damage. This is an especially useful cabbage for the fall kitchen. The crisp, substantial leaves are excellent for coleslaw, fried cabbage, soups and stews, and stuffed cabbage rolls. Dense heads also store well after harvest, extending the season long after many garden vegetables have finished. For us, though, one of its best uses is sauerkraut—the firm, crunchy texture holds up beautifully during fermentation. Approximately 110 days to harvest. Each packet contains a minimum of 100 seeds.
