Aaron Wilburn forges this vegetable cleaver at his Idaho studio from a damascus combination as bold as the handle it carries: a complex mosaic tiling runs through the blade's center, flanked by spine and edge bars of twisted damascus in complementary variations. The pattern reads differently at every angle, dense and energetic, a house-made steel that makes you look twice before the knife is even in your hand. At 187mm / 7.3" with 116mm of height at the heel, this is a cleaver with range. Convex bevels carry enough mass to work through gourds, dense squash, and the toughest vegetables the season offers, while the geometry thins sufficiently toward the edge for precise, controlled cuts no matter the recipe du jour. The blade maintains an even 3.2mm from choil forward, the weight distributed across the full height doing its share of the work with every stroke. At 16.4oz, it is substantial without being unwieldy. The full-tang construction puts the damascus pattern on full display around the entire perimeter of the handle, the steel visible from every angle. Giraffe bone in a pale lavender tone, smooth and distinctive in grain, is secured with raised, polished stainless pins in a grip that fills the hand with purpose.
