The Cistercian order of nuns at Monastero Suore Cistercensi of Lazio, Italy began farming their own vineyard in 1963, but it wasnt until the early 2000s, when their wines came to the attention of winemaking consultant Giampiero Bea (son of legendary winemaker Paolo Bea), who fell in love with their wines and pushed them forward, and like Bea's wines, Suore Cistercensi's are uniquely wild but elegant. Coenobium Ruscum is a blend of the same four varieties that are found in the standard Coenobium label: Trebbiano, Malvasia, and Verdicchio, but in this case, the wine was fermented on its skins for 15 days, and was then allowed to rest on its lees for a period of two weeks, adding texture, body, and unique aromas. With notes of orange peel, dried tangerine, pear, mint, ginger and roasted fennel, this is an unbelievable food wine. Only 4,000 bottles of wine produced annually. 13.5% ABV
