A traditional method blend of eating and cooking apples from our walled garden, vinified and aged in oak barrels for 10 months. Tasting note: Nose: Elegant, rich and deep. Notes of almond, lemon rind, candied apple. Palate: Crisp, bright and rich. Notes of green apple, toffee, vanilla, sea salt, honey and blackcurrant. Finish: Bright, saline, complex acidity. Lime peel with ripe fruit, spices and herbs. Food pairing: Perfect on its own but will pair with light chicken dishes, Truffle and scallops.
