Lemon Berry Cake – bright, sharp, and packed with berries Right. Lemon and berries. You’d think it’s simple – lemon cake, throw some berries on top. But if the lemon’s too weak, it’s boring. Too sharp, and it’s like eating furniture polish. Took me a while to get the balance. I start with a proper lemon sponge – zest and juice, no artificial oil. Then a layer of raspberry and blueberry compote (chunky, not jammy). And a lemon cream cheese frosting on the outside – tangy, smooth, not too sweet. Anyone who wants a cake that doesn’t put them in a food coma. One thing to know The fresh berries on top are best the same day. After that they go a bit soft. Still tastes fine, just not as pretty.
