Leyden (or Leidse kaas) is a firm, semi-hard Dutch cheese known for its distinct tangy flavor and spicy aroma, derived from the addition of cumin seeds. Made from pasteurized cow's milk, it is similar to Gouda in shape but has a lower fat percentage and a sharper, spicier taste that intensifies with age.
