Lima Giant Beans Peruvian Dry (Pallares) This Extra-large, flat, cream-colored Lima bean, is native to Northern Peru. When cooked has a creamy, meaty texture and savory flavor. The ir size and heartiness make them great for stewing, as they hold their shape. Excellent choice for soups or to make a creamy puree. Basic preparation: Wash, rinse & soak overnight. Add 4 Cups of water / Cup of Bean, and bring to a boil. Reduce heat and simmer covered for 60-90 minutes or until tender (add more water as needed).
