A modern Scottish “maritime-style” London Dry gin made in Leith, Edinburgh by the Port of Leith Distillery, designed around a very simple but tightly controlled botanical set, with juniper, fresh lime peel, and pink peppercorns at its core. It’s certified organic and built around a philosophy of balance and precision rather than heavy complexity or sweetness. In the glass it is crystal clear, and the aroma is immediately bright and zesty: fresh lime zest dominates first, followed by clean juniper and a soft, warming spice from pink peppercorns. The whole profile feels very lifted and direct rather than layered or heavy. On the palate it is crisp and energetic. The initial impression is sharp citrus oil from lime peel, quickly supported by juniper resin and a gentle herbal backbone, with pink pepper adding a light, tingling spice rather than heat. It stays lean and refreshing throughout rather than oily or sweet.
