It has a slightly salty finish with a delicious melt in the mouth texture. The blue green veins deepen as the cheese matures, and the familiar flavour of the blue deepens. Golden Cross Goats Cheese, Eastbourne, East Sussex. A log shaped goat’s milk cheese which can be eaten fresh or matured, lightly charcoaled prior to maturation when a velvety white penicillium mould develops on the surface.
