It often crystallizes in the winter (depending on type of flora), so it is reheated at different times throughout the year. This temperature range is still considered raw, because the average bee hive temperature is about 95°F – 110°F. Non-raw honey is typically heated to 160°F to make it flow faster and more easily. This local honey is not filtered, a fairly wide mesh strainer is used to strain out occasional wax pieces or bee body parts.
