Long Island Improved is a classic heirloom Brussels sprouts variety that produces compact plants with dozens of firm, round sprouts 1–2 inches in diameter along a sturdy central st alk. The sprouts have a crisp texture and a sweet, nutty flavor that becomes even sweeter after light frost. They are excellent roasted with olive oil and garlic, steamed, sautéed with bacon, added to stir-fries and casseroles, or shredded raw for salads. This variety is a good choice for Utah because it is cold-hardy, performs reliably in our cool springs and falls, and produces high-quality sprouts in our shorter growing season with full sun and well-drained soil.
