Opening a pouch of Madagascar vanilla beans is like taking a trip back in time to when you were younger. Its aroma will be familiar to you, like the smell of vanilla cupcakes or reminiscent of the taste of grandma's homemade ice cream. It's that classic vanilla scent that you grew up with and that most cooks and bakers use today. As you bring an individual bean closer to your nose, you will be amazed at the sweetness and the simplicity of its pure profile that has a bold vanilla smell with undertones of butter and perhaps a hint of chocolate, softened with notes of caramel and vanilla spice. Finally, a finished Madagascar vanilla extract will be a rich and powerful classic vanilla smell and taste. The Madagascar vanilla bean is everyone's favorite for all of the aforementioned reasons. It became the world's most popular vanilla bean because Madagascar has historically produced the world's most vanilla beans. If you grew up loving the taste of vanilla, the vanilla you were tasting most-likely came from Madagascar. So it's a familiar smell and taste that we all love. One of the more popular Madagascar vanilla beans is the Bourbon bean. Contrary to belief, the Madagascar Bourbon vanilla bean isn't named after a type of alcohol. Bourbon (previously named Reunion) is an island several hundred miles east of Madagascar where the beans are grown. These Vanilla Beans are of the highest quality and have a rich, dark aroma. They are very oily with a strong vanilla scent. Grade A Madagascar vanilla beans are usually between 5" and 7" inches long and have a dark brown color. They are perfect for making homemade vanilla extract, home cooking or baking.
