The LONG VU is the latest model among the AUTHENTIC BLADES knives. We were looking for a long, narrow knife shape for a long time. The result is the feather-light LONG VU with its 25 cm long and only 1 mm thin blade. This knife can be used to cut fish and meat into extremely delicate slices. With gentle pressure, the blade is very very flexible and adapts perfectly to the material being cut. Its carbon steel blade can be sharpened easily with incredible razor sharp results, allowing it to glide smoothly through a ham or roast, for example. But even large fruits with soft skin, such as mango, can be cut into slices of any thickness in one go. The light handle made of white cedar wood sits comfortably and securely in the hand in every cutting position. There is no need to reach around, so the cut can be carried out in one go. On our own behalf: The knives are made entirely by hand by small family businesses in Vietnam. A comparison with the quality of CNC lasered and sharpened mass-produced goods is unnecessary. Each handle is carved by hand and the blades are cut out with large tin snips without punching. The knives may have small blemishes. However, these do not reduce their suitability for everyday use and operational strength, but rather enhance their individuality and specialness.
