Right. This one's a bit of a nightmare to be honest. Not because it's difficult to make. It's not. Actually pretty straightforward. The nightmare is keeping it in stock because people go absolutely MENTAL for it. Like properly crazy. I put one in the cabinet and it's gone within hours. Every single time. I didn't even know what Biscoff was a few years back. Someone came in and asked if we did a Biscoff cake and I said what's that then? They looked at me like I'd just landed from another planet. Turns out it's those little caramel biscuits you get on planes sometimes. The ones in the red packet. Yeah those. Apparently people are obsessed with them. So I had a try. Made a test one. Took it round my mate's house for Sunday dinner. Her kids devoured it before the adults even got a look in. Her husband who never comments on anything said "that's actually really good" which is basically a Michelin star review coming from him. So here's what's in it. Vanilla sponge base. Nice and light. Nothing too heavy because the rest of it's doing quite a lot. Then we spread this thick layer of Lotus Biscoff spread. The smooth stuff. Not the crunchy. Although if you want crunchy just ask and I'll sort it. Then more sponge. More spread. Then the whole thing gets covered in Biscoff buttercream which is just... yeah. It's as good as it sounds. Buttercream with actual Biscoff spread beaten into it so it's all caramel and spiced and moreish. Then on top? Crushed Biscoff biscuits obviously. Lots of them. Sometimes a drizzle of melted spread if I'm feeling extra. Who's buying this one? Everyone honestly. It's mad. Teenagers absolutely love it. Something about that caramel flavour hits different for them. Coffee lovers because Biscoff and coffee is a proper combination. People who've seen it on TikTok and need to try it for themselves.
