The Collard family settled in Bouzy in 1919 when Lucien Collard (grandfather of the current owner of the House) married Julia Bara. Wine was very much part of the family, with Juli a coming from a family of winegrowers who had settled in this Grand Cru since 1833. Plenty of apples and soft stone fruits characterise this Champagne, as well as floral notes. The palate is fresh and citrussy with a bright finish and notes of grapefruit and green apple. A blend of 30% Chardonnay and 70% Pinot Noir, dosage of just 5g/L is added to the wine in the production process (dosage is a sweetened wine added once the Champagne has finished its second ferment).
