We dove in early (12 hours old) on espresso and drip and were still very pleased but will improved with some age. Dont be afraid to dive in early! Our goal is to bring as much sweetness and character of the bean forward without over roasting the flavors out of the bean. We like to drop this bean around 35 degrees after first crack.
