Right. This one’s for the unicorn believers. You know who you are. You had a unicorn phase as a kid – and let’s be honest, you never really grew out of it. You’ve got a rainbow notebook somewhere. You definitely have a favourite unicorn emoji. No judgement. I have one too. Someone asked me a while back: “can you do a unicorn cake for my daughter’s 5th birthday? She wants rainbows and sparkles and a horn.” I said yeah, course. Made a pastel cake, swirls of pink and purple, a gold horn, little edible stars. She cried. Happy tears apparently. Then the mum cried. Then I nearly cried. Anyway. So here it is: Magical Unicorn Cake – available at our Bromley bakery. It’s a round cake, about 7 or 8 inches. Feeds 6–10 people. Perfect for a unicorn birthday party, rainbow themed celebration, or any time you want a bit of magic. What’s in it? Vanilla or chocolate sponge – your choice. Our proper one. Light, fluffy, real vanilla or proper chocolate. Buttercream – swirls of pastel pink, purple, blue, and yellow. All in one cake. Looks like a unicorn mane. The horn – gold coloured, made of sugar or white chocolate. Edible. The ears – little fondant ears on top. Also edible. On top – a cascade of rainbow sprinkles, edible glitter (the safe kind), and a few little stars. Around the sides – more swirls or rainbow dots. It’s a lot. But in the best way possible.
