Mahembe is a family operation, a source of community support in the Nyamasheke region of Rwanda. We have proudly roasted and served their coffees since Day 1, firstly via Nordic Approach and now Latanier Coffee. THE PROCESS Cherries are picked on Justin’s largest farm, Gituntu. The initial 24H underwater soak allows for a slower and controlled flavour development, before being transferred into sealed tanks for another 24H of anaerobic fermentation. This accelerates fermentation and enhances the depth of sweetness. Finally, cherries are pulped and dried on raised beds. WHY WE CHOSE THIS COFFEE We wanted to test our “special” processing methods across various origins. Through trial and error, we have achieved the goal of our process - one that balances the dense, fruit flavours of an anaerobic coffee, but retains the sweetness and density of a honey processed coffee. In this cup we are tasting red grapes, fresh berries and purple florals.
