A medium sized, utilitarian kitchen knife that does just about anything on the cutting board. The Bunka is compact and agile for detailed work, but tough enough to take on the heavier tasks most knives this size would shy away from. A genuine all-rounder, equally at home with vegetables, herbs, and proteins. The 170mm by 50mm blade is cut from Nitro X7, a premium nitrogen-alloyed stainless steel, and runs very hard at 63 HRC for a thin, keen edge. Its standout trait is toughness: for premium steels in its class, it's notably less prone to chipping, so the knife shrugs off the kind of work that would damage a more brittle blade. A convex geometry keeps it strong behind the edge and gives clean, smooth food release. The upper blade is detailed with laser-marked circles over a satin finish below. The handle is built entirely from composite, Micarta, in an Ivory and Red gradient, set behind a brass bolster. It weighs around 210g, with a weight and balance that feels great in the hand. Each knife comes with a matching Red Micarta magnetic blade guard. This is a one-time run of 32 pieces, each individually marked, and the last of our Nitro X7 stock.
