The November 2025 Maker’s Edition features 12 uniquely numbered Chinese-style cleavers, made from 2mm thick W1 / C125U / C130 high-Carbon steel. Each blade has been differentially quenched and meticulously hand-sanded to reveal a striking Hamon finish, a unique visual testament to both craftsmanship and performance. Each cleaver is fitted with a predominantly red handle, accented by four brass stripes and a brass pommel — a nod to the Chinese flag, but also a design choice that ensures the precise balance and forward momentum essential for this blade style to perform at its best. To this we added a beautiful walnut wood blade guard with a custom brass rivet to protect the blade from rust and impact. We’re particularly pleased with the results of the heat treatment. The Hamons are clean and defined, and the blades reach an impressive 63 HRC, combining exceptional hardness with the refined cutting geometry and sharpness that define a truly capable kitchen tool. The blade measures 18 cm in length and 10 cm in height (at the center), with an overall length of 28 cm, and weighs approximately 330 grams per knife. The Chinese cleaver is one of the most functional and versatile knives in any kitchen. Despite its size, it’s not a butcher’s knife — but rather a precise, all-purpose tool suited for slicing, mincing, crushing, and delicate vegetable work alike. Its broad, thin blade allows you to scoop and transfer ingredients easily, while the flat edge ensures consistent, efficient cutting. In skilled hands, it becomes a knife that can do it all - balanced, responsive, and deeply satisfying to use.
