Mango sponge – soft, not too sweet, made with Alphonso puree if I can get it. Then a thick layer of passion fruit curd – tangy, buttery, with those little black seeds. On top, a mango buttercream (creamy, pale orange) and a zigzag of passion fruit sauce. I also add a few fresh mango slices and a sprinkle of lime zest because why not.
